Mixed Cooked Rice Barberry

Ingredient: (for 4 persons)

 

Method of provision

  • Rice: five glasses
  • Barberry: 100 gr
  • Chicken: one second of chicken
  • Onion: a large onion
  • Saffron, salt and oil: to enough or required amount

Method of provision

Wash rice and soak it with salt and saffron. After cleaning and washing up, chicken should be baked along with salt, onion and saffron. Bones of chicken should be taken out. Rice should be put on necessary heat temperature with the same soaked water along with a little oil (Rice should be baked with water called at “Kateh”). Then saffron should be added according to one desire. When rice water is finished, chicken, which their bones have taken out, should be put at the middle part of rice and chicken surroundings is engulfed with rice. Then, rice should be drawn. It should be noted that apply non-stick container for baking rice.   After cleaning and washing, barberry should be heated with a little oil and/or butter according to one’s taste. When rice is drawn, it should be turned upside down on a bowl. Using rice cooker will make the operation easier. Bottom of the pot is cut into four parts and fill barberry between the cut and then serve.
