Simple cooked rice

Ingredient: (for 4 persons)

  • Rice: one kg
  • Oil: 150 gr
  • Rubbed saffron: one teaspoons
  • Yogurt for burned part of rice food scraped from the bottom of pot: half a glass of water.
  • Yolk of egg: 2

Method of provision

Fill pot with water let it be boiled. For preparing simple cooked rice, if wanted rice to turn into white, add pounded white vitriol (as large as a hazelnut) to be boiling water and then should be poured inside rice water. Also, a half glass yogurt in gradually spilled in container after pouring rice in a container. Then, salt of rice is taken out. Salty water is emptied and rice is put at boiling water. Stir it once or twice slightly and then mix it. Let rice be boiled, Mild the pot fire to some extent, with the aim of softening kernel of the rice. If wanted color of rice to be more transparent, add two or three spoons of oil on the cooked rice. Then, rice is put on strainer. It is better to choose wooden strainer. A Semi – Warm water is poured on surface of strainer with the aim of preventing it from lucidity and salinity of rice. And, two or three soupspoons oil are poured on surface of pot per each one kg of rice. Add a half of glass of water to the pot. Then, pot is put on fire, aimed at heating the oil. Then, rice is poured into the port. Surrounding of rice should be shaped like cone. Lid of the pot is put heat of container or pot should be reduced. Aim at reducing perspiration degree at the pot. Then three to four soupspoons oil and a half of glass of water is heated, the content of which is poured on the rice. In case of having stove, after fastening lid of pot, put container on floor of stove. The temperature should be regulated up to 350 degrees. Reduce temperature up by 50 degrees after half an hour heat and let is to drawn. For drawing the rice, if you do not need burned part of rice, (like cooked rice with kebab), one hour is needed. If you want burned part of rice, one and half an hour is needed. Wanted burned part of rice to be peeled or taken out easily, exit rice from stove half an hour sooner.
