Type of Saffron in 3 Countries

Since Saffron has different types which every country has different names for them in the follow, we explain classification of three important country producers:

Iran: Saffron is usually classified into different types as follow in Iran Markets

  • Sargol Saffron (Cut In filaments): This filament type, usually obtained from “bunched saffron” and “Pushal Saffron” which has no style & pollen and just  consist of red parts of stigma with a high power of coloring and aroma

  • Poushal Safforn (In Filaments): This type has obtained at the beginning of harvest ,a little longer than red parts of stigma that is usually in the form of triple filament The color of the end part becomes pale red and orange that is in the size of 3 to 5 mm after the existing joint among the 3 filaments. “Pushal” means massive for its volume resulted from the time and method of harvesting. “Pushal” has the same power of coloring and aroma as “ All red filaments” type and it usually use for fantasy and luxury packings.
  • Bunched Saffron (Dasteh Saffron): The all red and white parts of the stigma bunched and formed by a piece of thread is “bunch” type. Some customers upon their usages prefer to buy this type.
  • White Saffron: This type consists of the white and pale parts of the stigma, having high aroma but low color strength with a length of 5 to 15 mm, is used as an aromatic substance for foods and ….
  • Konch Saffron: This type is longer than white saffron type but it is more coherent. It consists of the lower and white parts of stigma together with a part of style, 3 to 5 mm, formed by a piece of thread with a total lenght of 2 to 4 cm.

In Iran farmers do not use the chemical material for cultivation and it is 100% organic.

Spain: Saffron is usually classified into different types as follow in Spain Markets

  • Coupe Saffron: Coupe means “to cut”, as in cutting off all the yellow bits. This type has no style in red color which its color strength should be at least 190
  • Mancha Saffron: In this type, the size of stigma is more than joint style of it. Its color strength should be at least 180 and its flower waste must be less than 4%WT
  • Mancha Superior Saffron: This type is Mancha grade A (I) which contains 90% stigma (red saffron filaments) & 10% its joint style (yellow saffron styles)
  • Rio Saffron: In this type, the size of stigma is equal to the size of its joint style and its color strength should be at least 110 and its flower waste must be less than 10%WT
  • Sierra Saffron: In this type, the size of stigma is shorter than the size of its joint style. Its color strength should be at least 110 and its flower waste must be less than 10%WT
  • Standard: It is a mixture of saffron types which has explained in above. Its color strength should be more than 130 and its flower waste must be less than 7%WT.
  • Molido Saffron: It is Saffron powder which can be prepared from any of above mentioned types and the type of saffron which is mentioned on it, should be matched to its specification. Its moisture must be less than 8%WT

India: Saffron is usually classified into three types as follow in India Markets

  • Morga Saffron: This type consists of red parts of stigma top with a high power of coloring and aroma.
  • Pahi Saffron: This type consists of Saffron Style.
  • Zarda Saffron: This type consists of saffron stamen
